I love that you describe exactly how this is done! Apologies for the bit of history, it's a professional liability in my case!

I was intrigued reading about the salt and thinking hmm...I have a bag of grey salt in the back of my cupboard. Then I saw the package and I have the same one bought from one of the most basic grocery stores in Canada, Safeway. I didn't think it was any better than Maldon, but I'll have to give it another go.
This was at least one good thing in January! I loved the HLG episode with you, Plum (the boys were clearly besotted), and I’ve been a longggg time reader of yours so was thrilled to also find you here!
I have that salt! My dad imported foods from Europe to Canada and the US (he’s long retired) and this salt was among his wares. It is very good stuff, despite the sun-par packaging.
